THE RESTAURANT THAT OPENED THE DOOR TO THEIR PANTRY

Restaurang Nygatan 57 has opened its pantry for the public. One step down from the restaurant, the shelves are filled with ecologically and locally produced products.
   -We want to give people the opportunity to make conscious choices and inspire with the same amazing ingredients we use in our restaurant kitchen," says Anna Larsson, CEO at Nygatan 57.

Crowberry juice, birch tree juice, meadowsweet drink – yes, it may not be products found in the conventional food stores, but the shop at Nygatan 57 is no ordinary grocery store.
– The idea is that you can buy the same kind of locally produced steak from Holmforsgården as you are served in the restaurant,” says Anna. Doris serves a mug of cornflowerjuice. It is sweet and fresh. “We think it’s important to give our customers the opportunity to taste,” says Doris. It is often through tasting as the most exciting conversations around food and commodities arise.
In Skafferiet, closely produced products is the very essence of the business.
– This means, for example, that honey from Skelleftehamn and cheese from Södra Svedjan are found on the best shelves,” laughs Anna.

Almost-done

The ambition of the shop is to offer people the opportunity to make conscious choices while inspiring people to cook real quality food in the kitchen there at home.

-All of us who work in the store are real food neards,” says Anna, and our chefs are happy to go downstairs to the shop and speak commodities and recipes with our visitors. This may be how you make your own recipe on a Västerbotten pie or something else.
Skafferiet has also launched the concept “almost-done-food”.
– If you love good food but do not have time for the cooking process itself  the “almost-done” concept is an appreciated thing. You can get a well thought-out food bag filled with delicacies to take home. All you have to do is add the finish.

Appreciated gift shop

Skafferiet has become an appreciated gift shop.
“We notice that it has become increasingly popular to give away an interesting taste or a high quality commodities, preferably something that in one way or another relates to our part of the world.
But sometimes there may also be variations of something quite common that suits the very best. Anna tells us that a mom bought a packet of colorful pasta for her student son.
-She explained that while he only eats pasta, he could at least get some more color on the plate. Of course, the pasta was colored exclusively with natural products.

The heart of the store

-If you go up to the mountain or out in the woods, it’s nice to bring an organic risotto with dried mushrooms,” says Anna, showing a light packed package.
Another appreciated thing is letterpasta and edible “rocks” with licorice flavor.
– The children love them.
But the very heart of the shop is still the cheese variety.
– Of course we have Västerbotten cheese and Svedjan cheese as well as other typical Norrland cheeses like Oviken and Skabram, but we are also trying to bring home the best cheeses from France and Italy.
For lunch you come by Skafferiet and buy a lunch box or a soup with freshly baked bread. But you want to be on the toes when it comes to the popular soup
-Sometimes it happens that it lasts until 14 o’clock, Doris laughs, but it belongs to the exceptions.
